I would suggest a RAID5 array for your data directory as this will give you improved performance and more disk space
RAID1 is more advantageous when a failure actually occurs, because there is very little in the way of a performance impact when the data is rebuilt. RAID5 on the other hand does see a significant performance hit when your server rebuilds data after a failure. However, you shouldn't find yourself replacing hard disks very often!
For info, I always go for a RAID1 array on the sytem / notes program partition. It looks like you've decided on that already
